cooking in staff homes

We had the opportunity to cook our lunch meal at a staff home on Monday. It was part of our practical skills class. There was 10 of us altogether. We were at the Birkemo's house who served in Africa for 9 years. It was fun to work together with other couples and to be able to gain some insight about cooking in areas of the world where you can't run down to Walmart and get what you need. We made some beans in the pressure cooker, a roast in the pressure cooker, a salad plate, fruit plate (mango, papaya, coconut and pineapple) and Manioc fries (yucca root). We really enjoyed to manioc fries. We also made fresh limeade and bissap (a red drink made from the flowers of a hibiscus). It was all delicious.
